Banana Bread/Muffins
4 large bananas-- I love to use the over-ripe bananas that no one will eat!
¾ cup white sugar
2 eggs
1 ½ cup of flour
½ cup whole wheat flour
½ tsp. salt
½ tsp. soda
½ tsp. baking powder
½ cup butter, melted
1 tsp. vanilla
½ cup nuts, optional
Beat bananas, sugar and eggs. Add flour, salt, soda and baking powder. Stir in melted butter, vanilla and nuts. Pour into greased loaf pan and bake at 375 for 1 hour.
For muffins— line muffin tin with paper or foil muffin/cupcake liners. Fill 2/3 full with a batter. Bake in 350-degree oven for 25-30 minutes- or until desired doneness is reached.
This is a recipe that I have tweaked to fit our needs. Originally, the recipe calls for more sugar, less bananas and white flour only—but I changed things up a bit—and made these a little healthier! I have also used olive oil in place of butter- which is good.
The house smells SO GOOD in the morning when I make these muffins! They are quick and easy to stir together- and while they are baking—I get ready for work! This is a great recipe for busy moms! (Aren’t we ALL busy??!!) How nice for the kids to wake up to the warm and inviting scent of fresh banana muffins- and hot coffee brewing! With the quiet music of Selah playing in the background, it sets the tone for a great day ahead--- and serves up memories of “family” and “home” in the making!
