Butterscotch biscuits
This recipe comes from Scotland UK.What you need: self raising flour 12oz: margarine 4 oz. Half teaspoon of salt: 1 egg beaten: brown sugar 8 oz. 1 Teaspoon vanilla essence
Set oven to gas mark 4 or 350 degrees F. Grease a baking sheet. Melt the sugar, margarine and vanilla essence together in a saucepan very gently over a low heat. Remove from heat and when mixture is cool add beaten egg and mix together. Sift flour and salt in bowl and make a well in the centre then pour in the cooled egg/fat/sugar mixture. Knead into a stiff dough it will be fairly dry but needs no extra moisture. Roll out dough on a floured surface into half inch thickness and cut out the biscuits with a 2 inch biscuit cutter. Place on the baking sheet with enough ****e to allow spreading. Bake for 20 mins until light golden.
