Knegli (Plum Dumplings)
15 Plums
1 1/2 Cup Mashed Potatoes (cooled)
1/2 tsp. Salt
2 Eggs (beaten)
1/4 Cup Farina
1 1/2 Cup Flour
7 1/2 tsp. Sugar
Add salt and eggs to mashed potatoes. Combine farina and flour. Mix and knead. Roll out dough and cut into 15 squares: wash, pat and dry plums. Place 1/2 tsp. sugar in each plum. Place plum in center of each square and fold dough around plum so that it is completely covered. Drop into boiling water. Cook 20 minutes.
Knegli is traditionally served with saurkraut.
